What "certified Manuka honey" actually certifies — and how to check a jar yourself
"Certified" is doing an enormous amount of work on Manuka packaging, and it is one of the most searched words in the whole category. It is also one of the vaguest, because there are at least four different things a Manuka jar can be certified for, and they prove very different things.
Here is the whole structure, from the layer that matters most to the layer that matters least — and then a check you can run in a shop in under a minute.
Layer one: the New Zealand government export certification
This is the foundation, and it is the one shoppers know least about.
Since 2018, no batch of honey may leave New Zealand described as Manuka unless it passes the Ministry for Primary Industries scientific definition. That test measures four chemical markers and one DNA marker from Manuka pollen. Honey that passes is classified either monofloral Manuka — predominantly from Manuka nectar — or multifloral Manuka, a genuine harvest with more of other flowers in it. Honey that fails cannot be exported as Manuka at all.
That is not a brand promise. It is a government laboratory result attached to a shipment, and it is the difference between Manuka honey and honey with the word Manuka printed on it.
What it proves: the honey really is Manuka, and it really came from New Zealand. What it does not prove: how strong it is.
Layer two: the UMF licence
UMF is a certification programme run by the UMF Honey Association, and a producer must be a licensee to use the mark. Every batch is tested for four things:
- MGO — the signature compound, and the strength number.
- DHA — the precursor that is still converting into MGO, which says something about how the honey will age.
- Leptosperin — a natural compound from Manuka nectar that is extremely difficult to fake. This is the authenticity check.
- HMF — which rises with age and with heat, so a low figure means the honey is fresh and was not over-processed.
A genuine UMF jar carries a licence number. That number is the part most people never use — and it is the single most useful thing on the label, because you can look it up.
What it proves: strength, authenticity, freshness and careful handling, all verified by a third party. What it does not prove: that you will like the taste.
Layer three: the batch test
Underneath the programmes sits the humble lot or batch code, usually printed near the best-before date.
That code ties your specific jar to a specific tested harvest. A serious producer or retailer can tell you the test results for that lot. If nobody can, then the certification on the front is describing the brand rather than the jar in your hand.
What it proves: traceability — that this jar, not a jar like it, was tested.
Layer four: diet and production certifications
Halal, kosher, organic and similar marks answer a completely different question. They say nothing about Manuka strength or authenticity — they concern how the honey was produced, handled and supervised. If one of them matters to you, look for it explicitly; do not assume a premium grade implies it. We hold halal and kosher certification and publish both separately for exactly this reason.
What "certified" never tells you
- Nothing about value. A certified UMF 10+ and a certified UMF 25+ are both fully certified. Certification is a floor, not a ranking.
- Nothing about the packer. "Packed in New Zealand" and "Product of New Zealand" are stronger than "packed in" some other country, which can appear on honey that was shipped in bulk.
- Nothing about taste. No laboratory measures whether you will enjoy a spoonful.
The five-step check, in under a minute
1. Read the origin line. Look for Product of New Zealand. Be alert to "packed in" without a country of origin.
2. Look for monofloral or multifloral Manuka. If neither word appears anywhere on the jar, ask why.
3. Find a named grading system and a plus sign. UMF, MGO, NPA, IAA, MGS — and a +, which means guaranteed minimum. A bare number, "Active", or "up to" is a weaker statement. Our guide to every Manuka label that isn't UMF covers the rest of the alphabet.
4. Find the UMF licence number — and look it up. The UMF Honey Association publishes its list of licensees. Two minutes with a phone settles it. A jar that uses the UMF mark without a licence number is the clearest warning sign there is.
5. Find the batch code and the best-before date. Then, if it matters to you, ask the seller for the certificate of analysis for that lot. How a seller answers that question tells you a great deal.
Red flags worth walking away from
- The UMF mark with no licence number.
- A grading number with no system named — "Manuka 300", "Manuka AA".
- "Total Activity" or "TA", which inflates the figure by including ordinary peroxide activity that any honey has.
- A price that is dramatically below everything comparable at the same grade. Certified Manuka is expensive because the honey is scarce and the testing is real.
- No lot code, or a lot code nobody can explain.
